Banana, Lemon, Blueberry and Oat Smoothie is the perfect way to hit your midweek stride. Start with a smoothie feast! Banana lends itself perfectly to a smoothie… The fruity lemon zing is refreshing and lifts your mood. The colour is a deep blue-purple and is a natural wonder.

I first had a breakfast like this in Sicily many years ago. It was wonderful!!! Fresh lemon juice from the trees in the garden was the icing on the (smoothie) cake!!!

Top Tips – Banana, Lemon, Blueberry and Oat Smoothie

It would be ideal if you can leave this in the fridge overnight before making. Otherwise soaking for a minimum of 40 minutes works well.

Frozen blueberries are perfect for this smoothie. If blueberries are in season go for fresh. Both work well.

Recipe – Banana, Lemon, Blueberry and Oat Smoothie

Serves 4-6
Preparation time 5 minutes (excluding soaking time)
Cooking time 0 minutes

Ingredients – Banana, Lemon, Blueberry and Oat Smoothie

60 grams gluten-free oats
450 millilitres unsweetened non-dairy milk (almond milk is great)
2 bananas
100 grams frozen blueberries
Juice and zest of 1 lemon

Method – Banana, Lemon, Blueberry and Oat Smoothie

1. Place the oats and non-dairy milk into a container and leave in the fridge for a minimum of 40 minutes – preferably overnight
2. Using an immersion blender whizz the oats non-dairy milk and all the other ingredients until smooth and creamy
3. Pour in to glasses and serve.
