Perfect for canape bases as well as traditional rosti these Potato and Butternut Squash Rosti are easy and delicious. Baked not fried means they are slightly more healthy, there is no danger of them falling apart in the pan and you can put them in the oven and get on with other things.

Mini rosti topped with Black Olive Tapenade or Houmous make amazing gluten free, vegan canapes. Larger rosti topped with mushroom stroganoff are a wonderful main.
