Jerusalem artichokes are everywhere at the moment. Super seasonal. The are funny looking things (not to be confused with the totally different globe artichokes) that have quite a (windy) reputation. The do have a fantastic texture that lends itself very well to soup. My Jerusalem Artichoke and Sweet Potato Soup is a wonderful winter dish.
The spices and ginger work really well with the Jerusalem artichokes and sweet earthiness of the sweet potatoes. Drizzle with a little cold pressed pumpkin oil to serve if you want to fancy it up a little.
