Shrove Tuesday – Gluten Free, Vegan Pancakes

It is pancake day on Tuesday! Or Shrove Tuesday if you prefer. Pancake day originates from the feast day ahead of the first day Lent (Ash Wednesday). Pancake day was a useful to use up all your fresh ingredients before lent. That doesn’t really apply to this recipe but you can certainly join in the fun with these gluten free, vegan, soya free Buckwheat Pancakes.

These pancakes are UK style pancakes, similar to gallets rather than the deep cake like pancakes you find in the US. These are thin and bubbly and the pancakes roll and fold really well. The pancakes are great with either sweet or savoury filings. You can add a little sweetener of your choice to the mixture if you want a sweet pancake.
