Sometimes You Just Need An Easy Lunch

Sometimes when you are busy, tired or just can’t be bothered a quick sandwich or pitta bread is great. Not so easy when you are gluten free and vegan but much easier than it used to be. There are some brands which are vegan (BFee, Just etc.) and good. There are some that are gluten free and vegan and not so good (nameless but their gluten free breads are sweet, dense and cakey – not good).

Most gluten free, vegan bread products freeze really well. Really useful when you need something quickly. Today, I needed something quickly. So I knocked together a salad with olives, almonds, red cabbage, rocket, carrot and a bit of vegan mayonnaise (too sweet for me but I cut it with some lemon juice), toasted some BFree pitta and stuffed the pitta. You could always use something like Cabbage and Carrot Salad with houmous. This was just what I needed today…
