It’s cold outside, the days are getting shorter, the world feels like a mess. What is happening? Could Lord Alan Sugar be our next PM? Seems reasonable this week – it didn’t last.

Fortunately we can make it all better with some selfless mindfulness and by making gluten free, vegan Butter Bean and Aubergine Bake for supper this weekend. A delicious gluten free, vegan staple the Bake goes well with a light salad such as spinach and walnut salad.

You can bake this in individual foil containers and freeze this for the long winter ahead/ decade of the earth spinning on a different axis or just eat it now and live in the moment!
