Vegan Meringue is made from chick pea juice (known as aquafaba) and is made in much the same was as ‘normal meringue‘. As with ‘normal meringue‘ you need to use totally clean, free from grease, equipment and beat the mixture for quite a long time and then bake it for a long time in a low oven. You can make any size or shape: small bite size meringues or a full-blown, impressive, dinner party, Pavlova. The choice is yours! Enjoy!!!
