The clocks went back yesterday so it’s hello darker and colder evenings and goodbye daylight. The shortest day is less than two months away. What we need is a quick, easy, warming and delicious soup that we can rustle up after a hard day at work or after a long weekend walk.
Step forward gluten free, veagn Lentil and Mushroom Soup. I make this soup a lot in the winter and for a special occasion I add dried porcini mushrooms that I have soaked in hot water and use the strained soaking liquid as part of the liquid requirement in the soup. I am also very lucky that a good friend of mine has given me a bag of porcini mushrooms collected and dried by her parents. NOTE!!! Do not pick mushrooms unless you know exactly what you are doing. It can be very dangerous unless you are an expert.
