I adore this soup. It is souper (I know!) quick, souper easy and souper nutritious. Miso Soup with Tofu and Shitake Mushrooms is not only a great lunch or light supper dish it is my go-to quick fix when I’m feeling a bit under the weather.
You can make this a bit more substantial by adding gluten-free, vegan soba noodles or rice to the bottom of each bowl. I guarantee you will love this soup!
