Time to Make Gluten Free, Vegan Christmas Cake

Gluten free, vegan Christmas Cake. Celebration Cake. Ready for decorating.
The nights are drawing in, the glut of autumn fruit and vegetables is coming to an end and Bonfire Night is just around the corner. Must be time to make a Gluten Free, Vegan Christmas Cake. Don’t panic though. You can make them anytime from now until Christmas Eve.

Although this recipe is ready to eat the more you feed the cake with alcohol (if using) or store in a cool dark place the better it tastes. The deep sweetness of the fruit combined with the tangy richness of the molasses is perfect through the dark winter months.

Store the cake wrapped in brown paper and tied with string. An edible Christmas parcel.
