I love winter salads. Winter veg can get a little tedious sometimes so how about a Winter Vegetable Salad With Walnut Dressing. What could be better than curls of carrot, celeriac, turnip and a walnut dressing with a kick.
Raw vegetables are incredible and taste totally different to their cooked versions (totally better raw). I find carrots too sweet when they are cooked but can eat them all day raw. Same with turnip. I can’t bear it cooked but eat it by the bucket raw. Cut almost any raw vegetable in to strips or chunks and have with Houmous – Garlic Free. Yum!
