Winter Salad – Crunchy, Crispy and Earthy

Winter Salad – Crunchy, Crispy and Earthy

I love winter salads. Winter veg can get a little tedious sometimes so how about a Winter Vegetable Salad With Walnut Dressing. What could be better than curls of carrot, celeriac, turnip and a walnut dressing with a kick.

Raw vegetables are incredible and taste totally different to their cooked versions (totally better raw). I find carrots too sweet when they are cooked but can eat them all day raw. Same with turnip. I can’t bear it cooked but eat it by the bucket raw. Cut almost any raw vegetable in to strips or chunks and have with Houmous – Garlic Free. Yum!

I love this salad on it’s own or to have along side Roasted Winter Vegetables with Almonds and Olives, or Walnut and Mushroom Parcels. A fabulous treat for a winter supper.

My Favourite Gluten-Free Vegan Autumn Treats

My Favourite Gluten-Free, Vegan Autumn Treats are mostly fruit and pumpkin based. This is because fruit is soooo good in autumn. I love treats!!! I don’t have treats very often, but when produce is so good it is hard not to make the most of the bounty.
