Summer is coming to a close. Well, I maybe kidding myself a little, it may technically, have already have come to a close. I admit it could, possibly, be autumn. However, the weather is still not full-on autumnal so, for now, I’ll be sticking with late summer… Seasonal produce is incredible at the moment and I love to share seasonal recipes so, here’s Seven Late Summer, Gluten-Free, Vegan Recipe Ideas to take you through to autumn.

Late summer (or autumn, if you prefer) is a great time for the most amazing fruit and veg. There are so many fabulous crops at the moment. Apples are really coming into their own and root veg like parsnips are so good.

Let’s start with a dish that makes a fabulous starter. I adore Tofu, Radish And White Miso Summer Rolls. So easy, so quick and really, really tasty. I love to take these as a packed lunch.
Soups is always a winner at this time of year. Always easy, always tasty and when you’re using seasonal parsnips what could be better? Parsnip and Walnut Soup with Walnut Pesto is delicious!
One of my favourite main meals at this time of year is Pumpkin Salad with Crispy Sage. I adore rich, hearty salads and cripsy sage adds a real depth of flavour and wonderful texture to the dish. A winner for a family dinner.
I am crazy about Mushroom Risotto with Grilled Mushrooms and Tarragon. Mushrooms are in season at the moment so, see what fabulous mushrooms you can get hold of.
At this time of year when produce is so plentiful and so good I love to preserve food. This is perfect not just for making the most of amazing fruit and veg but for your health. I use Sauerkraut in place of onions in dishes. Where a dish calls for onions to be sautéed or fried I add sauerkraut instead. This little trick works beautifully in almost every dish.
Let’s not forget about breakfast ideas. I am crazy about pears at the moment. They’re so good right now and what better way to eat them that at breakfast in Pear and Cinnamon Smoothie.
Blackberries are the epitome of late summer fruits. Plentiful, rich and delicious. There are still some on blackberry bushes now. I often gather way too many blackberries and then freeze them for use later in the year (great in overnight oats!). I adore blackberries a little bit ‘boozed up’ and with chocolate. Blackberry and Almond Chocolate Mousse does this perfectly.
